How to Make Home Made Fudge

IndulgenceIf you want to make fudge that is luscious and creamy, it takes a little time, but it is well worth it. This can be great for a birthday celebration or other even! You will need:

– A large pot
– A candy thermometer
– Measuring cups and spoons
– A wooden spoon
– A whisk
– A 9” x 9” pan

The ingredients you need are:
3 C. white sugar
3 T. powdered cocoa
1 C. heavy cream
3 T. light corn syrup
2 T. butter (do not use margarine)
1 T. vanilla extract
A pinch of salt

First, you will want to butter your pan, so it is ready for the fudge after cooking. Take the cocoa, sugar and salt, and sift them together into your pot. You can do this by whisking them all together. Add the cream and the corn syrup. On medium heat, continue stirring with the whisk, making sure that there are no sugar crystals on the side of your pan. If there are any, wipe them off.

Keep stirring the mixture until you start to see bubbles. Once you see bubbles, stop stirring, and put your candy thermometer in the mixture. Once it has reached softball stage, (235-240 degrees Fahrenheit), remove from heat.
Once you have removed it from the burner, add the butter and vanilla, but do not stir it in. set it aside and allow it to cool down to about 110 degrees Fahrenheit. Once it is cooled, using your wooden spoon stir the mixture together until it starts to lose its gloss. This will take about 10 to 15 minutes. Once it starts to firm up and loses its sheen, pour it into your buttered pan. Let it cool completely, then cut into pieces and serve.
