3 tablespoons cornstarch
¼ cup sugar
½ teaspoon salt
2 cups milk
2 eggs, beaten
2 tablespoons butter or margarine
1 teaspoon vanilla
Mix together cornstarch, sugar, and salt in a medium size saucepan. Then stir in milk. Cook over medium heat, stirring constantly, until milk begins to thicken. Stirring is very important as unstirred milk may scorch on the bottom of the pan. The milk will begin to thicken as it heats. Pour 1/2 cup of the hot, thickened milk into the beaten eggs. Mix eggs and hot milk, then blend the egg-milk mixture into the remaining hot milk, stirring constantly. A whisk works nicely to blend in the eggs, and the constant stirring makes the pudding smooth. Cook about one minute longer until the milk mixture is thick Blend in butter and vanilla, and pour into a serving bowl. Refrigerate until served. The pudding will continue to thicken as it cools.
